Many moms love to welcome their grown children to a warm, delicious lunch, but moms also love to surprise their kids with homemade treats. Mother’s Day is the day when it’s nice to come to moms and grandmas with your gift, so you can enjoy it together, without mom busying herself in the kitchen and not worrying about whether the children will have enough to eat. Inga Akmentiņa-Smildziņa, head of parents’ organization Mammamuntetiem.lv, Rimi Berniem expert, shares spring recipes on how to surprise mom on special holidays.

In Latvia, Mother’s Day is celebrated on the second Sunday of May, this year it is on May 12. “It is a common tradition for families in Latvia to spend Mother’s Day enjoying a joint lunch or organizing a garden party,” observed Inga Akmentiņa-Smildziņa. She recommends going to visit dear mothers with a hearty village gift, so that the mother does not have to tire herself in the kitchen on this day: “Since it is the season of rhubarb and asparagus, you can prepare sweet and salty flatbreads. For example, rhubarb flatbread in the sweet one, and asparagus in the salty one.”

Asparagus pie with carrot pesto

“There are mothers and grandmothers who say: asparagus has been growing in my flower bed for years, but I have never eaten it. Bake a juicy asparagus pie for mom! By the way, asparagus is rich in vitamins A and C, keeps the digestive system in order and even lowers blood pressure,” says mom Inga Akmentiņa-Smildziņa and shares the recipe for spring asparagus pie.

Ingredients:

250 g puff pastry (or depending on the size of the pan);

250 g of asparagus;

1 jar Rimi Selection carrot pesto (or other pesto of choice);

150 g of gorgonzola cheese;

1 tbsp. Rauna green cheese;

1 handful of arugula;

70 g of prosciutto ham.

Cooking

Heat the oven to 190 degrees. Place the baking paper in the baking pan, then place the layered dough to form a dough container. Cover the dough base with pesto.

Cut off the hard parts of the stem of the asparagus and lay them side by side on top of the pesto. Place pieces of gorgonzola cheese on top.

Bake in the oven for about 15 minutes.

Before serving, the pie can be topped with prosciutto and fresh arugula.

Inga’s recommendations for pesto variations: “Asparagus pie can be made with pesto of your choice – dill pesto, sun-dried tomato pesto, sunflower pesto, etc. What everyone likes or what everyone can cook well! You can also vary with different cheeses.”

Rhubarb flatbread with strawberries and mom’s favorite ice cream

“It seems that every rural homestead in Latvia grows the glorious spring decoration of the garden – rhubarb. A Mother’s Day treat is the right time and place to bring it to the table. “Everybody seems to know that rhubarb can be crisped just as it has just been plucked from the bed, but they can also be used to make excellent iced dishes, such as flatbreads or pies,” he reminds Rimi For Children an expert.

Ingredients:

400 g of yeast dough;

4 small stalks of rhubarb;

200 g of strawberries;

150 g of sour cream;

2 small eggs;

100 g of sugar (or to taste);

cinnamon;

ice cream for serving

Cooking

Heat the oven to 190 degrees. Finely chop the rhubarb and strawberries. Beat eggs with sugar in a bowl, add cream.

Roll out the yeast dough, sprinkle it with rhubarb, strawberries and cinnamon. Then pour over the cream mass.

Bake for about 15 minutes.

Serve with mom’s favorite ice cream.

Inga’s recommendation: “This pie tastes best when served fresh from the oven – then it will play wonderfully with ice cream. Therefore, if possible, you can visit your mother with an unbaked pie and “shoot” it in the oven during the visit.”
