Every mother longs to receive a little care and love during the holidays, and the easiest way to show it is by pampering her with delicious food. That’s why the national food retail network ELVI, together with chef and nutritionist Yevgenia Jansons, offers recipes for crispy spring salads and easy-to-make but super-delicious cheesecake. Mom will appreciate it!
Crispy salad with asparagus and strawberries
(for 2 persons, cooking time 15 min)
Ingredients
250 g of strawberries
150 g of ricotta cheese
1 ripe avocado
200 g of asparagus
1 tbsp. olive oils
salt, pepper
2 handfuls (~60 g) of almonds
1 tbsp. sugar syrup or 1 tsp. of brown sugar mixed with 1 tbsp. water
75 g of arugula salad
75 g of spinach
for the sauce
juice of 1/2 lemon or lime
3 tbsp. red wine vinegar
1 tbsp. honey
1 tsp. mild mustard
1 clove of garlic pressed through a garlic press
5-7 tbsp. olive oils
1/2 tsp. finely chopped mint leaves
salt, black pepper to taste
Preparation

Mix all the sauce ingredients in a bowl and set aside.

Fry the almonds together with salt and syrup a little on a pan, remove from the pan and cool.

Cut or peel the stalks of the asparagus, cut the asparagus into smaller pieces and fry in olive oil for a few minutes.

Cut the strawberries into smaller pieces.

Cut the avocado in half, peel and cut into small pieces.

Arrange the salad – put arugula and spinach in the base of the bowl and pour over the majority of the dressing. Arrange asparagus, avocado, strawberries and nuts, ricotta cheese pizzas on the green leaves. Drizzle with the remaining sauce and serve.
Basque cheesecake
(for 6 people, cooking time 15 min + cooling time)
Basque cheesecake is the easiest holiday cake to prepare, ELVI offers to improve the classic recipe a little with Greek yogurt and honey, so that the cake becomes a little thinner and the honey gives it a harmonious sweetness. This recipe is for a small cheesecake, the amount of ingredients can be doubled.
Ingredients
450 g cream cheese at room temperature
135 g sugar or brown sugar
2 eggs
200 g of Greek yogurt + yogurt for decoration
40 g of honey
1 tsp. vanilla extract or vanilla sugar
1 tbsp. wheat flour
Preparation

Heat the oven to 220-240 degrees. Grease and line a cake mold with baking paper (16 cm for a smaller cake, 22-24 cm if you make a 2x larger cake).

Mix (but do not whip) cream cheese with sugar.

Add eggs and mix.

Add Greek yogurt, honey, vanilla extract, mix.

Add wheat flour, mix again and pour into the mold.

Bake for 15 minutes, then turn off the oven and leave the cake in it until the oven cools down.

Place the cake in the refrigerator for at least another 6 – 10 hours.

Serve with Greek yogurt and honey.
