Ilze Briede usually celebrates Easter at her home in the Brantu manor. It is the moment when the whole family gathers together and everyone is busy in the kitchen. Her holiday feast has certain characteristics to follow: “Everything must be round. The rounder, the better and healthier.”

For cottage cheese balls you need:

  • 200-300 grams of cottage cheese
  • 200-300 grams of flour
  • Five eggs
  • 200-300 grams of chilled semolina porridge
  • Six spoons of sugar
  • Salt
  • Penalty

Preparation:

Semolina porridge will work both as leftover and specially boiled. All this mass is kneaded together, if it comes out too sticky, then additional flour is added. However, you should not knead too hard, because then the balls will also be hard.

When the dough is kneaded, the hands are smeared with oil, the balls are washed and thrown into the heated oil.

“I have never seen a person who doesn’t like them. The main thing is that if you don’t eat them on the first Easter, you can eat them on the second and third and give them away,” said the owner.

The cottage cheese balls boiled in oil are first dried on a napkin, then sprinkled with powdered sugar.
